It’s Brownie Day…..BAM!

I love brownies, my husband loves brownies my kids LOVE brownies – I mean let’s be honest who doesn’t love brownies. (If you say you, we are sooooo not friends).

My blog calendar at work today says “Kat it’s brownie day, get baking”, so here I am. About to explode with ooey, gooey, chocolatey, chewy recipes from across the interwebs, direct to your screens to tease your occular appetite. Ok, so that might be a bit cruel, but you may just stop off at the shopping centre on the way home, grab some ingredients and voila, it’s brownies for dinner…errr dessert!

I’m going to start this recipe extravanganza off with a holy matrimony of peanut butter and chocolate. This recipe from Eat Good 4 Life tastes like heaven whilst also being gluten free and vegan. Don’t turn your nose up yet. Get a look at these bad boys.

Peanut Butter and Chocolate Blondies

Drooling yet? I am. Having lost nearly 100 lbs over the last two years, I want to keep the weight off but still enjoy baking (and eating) whatever I want. Yes, I keep a strict fitness regiment (yoga) and eat healthy. But sometimes, I just want something sweet and these fit the bill without giving me a third butt cheek.

Now this isn’t some blog on a healthy kick. I’m all about food, baking and culinary delights, whether they are healthy or not. I’m willing to try just about everything. My next recipe though is still gluten free, vegan and flourless. It actually includes one of my favourite ingredients in the world….avocado.

Ok, don’t spit out your coffee just yet. Avocado is easily a replacement for things like mayonaise and oil. Plus in this recipe you’d never know there was avocado in it unless you seen them being made.

Chocolate Lovers Brownies

My Whole Food Life delivers one tasty recipe with these chocolate lovers brownies. What is even better is there are only five ingredients. If you’re iffy about making something sweet with avocados as a main ingredient, make a half batch, try them out (or secretly make them and try them out on your family), you won’t regret it.

Ok, ok enough of the whole food, vegan, gluten free goodness. Sometimes there just has to be an ooey, gooey, bad for you, chewy brownie at the end of the day. I’m not much of a drinker so when you might be having a glass of wine, I might be having a bit of brownie. All things in moderation right?

Salted Caramel Brownies

Now these brownies from The Recipe Critic are in no way a healthy recipe. They aren’t good for your waistline but what they are good for is your spirits, your tastebuds and your mood. I dare you, take one bite of these brownies and not smile. People I work with call them “life changing brownies” because they are just that good.

If you here with me in the UK you will need to make your own caramel using heavy cream instead of buying caramels. Believe me, making your own caramel is DEFINITELY worth it. Homemade just tastes so much better.

Cookies and Cream Brownies

These brownies from Crazy for Crust have my mouth watering. There are only a few changes to the recipe for those of us here in the UK. We don’t have access to mini Oreos or white chocolate covered Oreos so just use the regular ones and crunch them up accordingly. Alternatively, you can purchase them for an arm and a leg on Amazon or at an American Candy Shop.

The brownies themselves are divine. Chewy not cakey, the marshmallow gives it a lovely creamy texture on the top that is paired beautifully with the melted chocolate chips. The Oreo cookies throughout the batter and on the top provide a lovely crunch just here and there. My one change to the recipe – remove the cream from the Oreos and just use the biscuits. I abhor the cream in Oreos and think it is foul, but I do love the biscuits! I think this recipe would also go really well with bourbon biscuits. Anyone up for trying it?

Ok one more and I swear I won’t post desserts for at least 12 hours (ha, ha). This recipe caught my attention because of my love of everything smores (including Pop Tarts but let’s not get off on a tangent).

Is there anything as lovely as the taste of roasted marshmallows? I don’t think so. I know, being from America that makes me completely biased. Try them, you’ll see! This smores brownie recipe from EazyPeazyMealz is just like it says on the tin, easy peasy.

Simple to make, even easier to eat why not cook them up for your work holiday party? You can guarantee you won’t be the fifth person to bring in a batch of mince pies or rum cake! People will love them (and of course ask you to bring them again and again).
